This hearty and cosy soup is loaded with tons of veggies and shredded chicken. This delicious summer soup is easy to make and can be ready in just 30 minutes. Ingredients of Summer Chicken Soup Recipe
- Chicken - 2 Cups
- Carrots - 1 Cup
- Peas - 1 Cup
- Cauliflower florets - 1 Cup
- Gelatin - 1 Cup
- Salt - 1 Teaspoon
- Lemon - 1
How to Make Summer Chicken Soup
Step 1: In a heavy-bottomed pan, simmer the chicken gently in the water till liquid is reduced and the chicken is cooked correctly.
Step 2: Remove the chicken and cut into small pieces and keep it aside.
Step 3: Reduce the cooking liquor further.
Step 4: Now, mix the gelatin powder in the water and add to the cooking liquor, add 2 cups of water, salt, cauliflower, carrots, peas and cook till the vegetables are tender.
Step 5: Once the vegetables are cooked properly, add chicken pieces and prepare it for 5-10 minutes.
Step 6: Remove the pan from the heat and add lemon juice to the soup.
Step 7: Serve the summer chicken soup hot or cold.
