Ingredients of Roasted Capsicum Salad Recipe
- Red Capsicum (Pepper) - 5
- Extra Virgin Olive oil - 2 Tablespoons
- Yellow capsicums (Peppers) - 4
- Basil leaves - 1/4 Cup
- Roasted pine nuts - 2 Tablespoons
- White wine vinegar - 1 Tablespoon
How to Make Roasted Capsicum Salad
Step 1: Pre-heat oven to 180°C.
Step 2: Now, prepare a large baking tray with baking paper.
Step 3: Cut the capsicums into large pieces and remove the seeds and steams.
Step 4: Now, adequately set the capsicums, skin-side-up on the baking tray in one single layer.
Step 5: Place this baking tray into the oven and bake the capsicums for 15-20 minutes. Remove it from the oven and rearrange it and change the side of the capsicum and swap trays between the top and bottom racks.
Step 6: Again cook the capsicums for 20 minutes. Once its ready set aside to cool.
Step 7: Set capsicum inner side up on a serving plate. Drop an oil and white wine vinegar over it and garnish with basil leaves and pine nuts and serve.
