Tikha Gathiya or ganthiya is a crunchy, spicy and deep-fried snacks made from gram flour and red chilies. It is a very famous Gujarati snacks dish which is made during Diwali. Tikha gathiya looks similar to the normal sev, but the essential difference is that tikha gathiya is a little thicker in size and it has red chili powder and ajwain and peppercorns in it.
To make this snack is easy and required no extra efforts. It is the best tea time snacks for your family. During the Diwali festival, you can make it and store it in an air-tight container, and serve it to your guest and family. It stays fresh for 10-15 days. But before storing it ensure that they completely cooled down. Follow this tikha gathiya recipe to make this crispy snacks.
Ingredients of Tikha Gathiya Recipe
- Besan - 1 Cup
- Carom seeds (Ajwain) - 1 Teaspoon
- Red chili powder - 1 Teaspoon
- Turmeric powder - 1/2 Teaspoon
- Black paper powder - 1/4 Teaspoon
- A pinch of baking soda
- Salt - 1 Teaspoon
- Oil for deep frying - 4 Cups
- Water as required to make dough - 1 Cup
How to Make Tikha Gathiya
Step 1: In a large bowl, sieve the gram flour and then add red chili powder, turmeric powder, baking soda, carom seeds, black pepper powder, salt, and one tablespoon oil and mix them well.
Step 2: Add required water to it and knead a smooth dough from it.
Step 3: Ensure the dough is not very soft or not very tough.
Step 4: Apply some oil to the dough and keep it aside.
Step 5: Now, take a Sev Machine and place a mould at the bottom of the machine to make a thick sev or gathiya.
Step 6: Then add dough into the machine and close the machine tightly.
Step 7: In a frying pan, heat the oil over the MEDIUM heat. When the oil becomes sufficiently hot, hold the machine over the frying pan and turn the machine handle and force the moulds to create a gathiya. Circularly move the machine over the oil and turn the handle continuously.
Step 8: Fry the gathiya till it becomes golden brown for 4-5 minutes over the MEDIUM heat.
Step 9: Remove the gathiya from the oil and drain it on the absorbent paper.
Step 10: Let the Gathiya becomes cool then store it in the airtight container.
