Braised Chicken with Tarragon
Braised Chicken with Tarragon is easy one-pot meal recipe. In this recipe, chicken is cooked with wine, leeks, butter, carrots, fresh herbs, and tarragon. You can also add your favorite spring vegetables to it to make it more delicious. These delicious chicken portions served in white wine, and cream sauce flavored with tarragon is ideal served with crispy potatoes and seasonal vegetables.
Ingredients of Braised Chicken with Tarragon Recipe
- Oven ready chicken - 1
- Salt - 1 Teaspoon
- Pepper - 1 Teaspoon
- Butter - 55 gm
- Finely chopped onion - 1
- Dry white wine - 200 ml
- Double or single cream - 500 ml
- Crème Fraiche - 250 gm
- Chopped fresh tarragon - 100 gm
- Fresh herb sprigs to garnish - 1 Tablespoon
How to Make Braised Chicken with Tarragon
Step 1: Cut the chicken into eight pieces and rub salt and pepper into the skin and flesh. Set aside.
Step 2: Melt the butter in a Frying pan, add the chicken and cook until browned all over, turning once or twice.
Step 3: Add the onion and cook briefly before adding the wine, cream, and crème Fraiche.
Step 4: Stir in the tarragon and bring to the boil. Cover, reduce the heat and simmer for 45-60 minutes, until the chicken is cooked and tender, stirring occasionally.
Step 5: Using a slotted spoon, remove the chicken to a plate, cover, and keep hot.
Step 6: Bring the sauce in the pan to the boil, then boil rapidly until reduced. Adjust the seasoning. Serve the hot chicken with the sauce poured over. Garnish with fresh herb sprigs.
Step 7: Serve with Duchesse potatoes and broccoli florets.
