Sama Peanut Rice
Sama rice is one of the vastly eaten food during fasting. Sama peanut rice dish is a combination of sama rice and peanut. It can be healthy wholesome during the fasting days. This has a very enjoyable flavor and rustic texture in which cooked sama rice is mixed with peanut and other spices mixture. You can enjoy them plain or with singhare ki kadhi. Ingredients of Sama Peanut Rice Recipe
- Sama rice - 1 Cup
- Water - 2 ¼ Cups
- Rock salt - 1 Teaspoon
- Peanuts - ½ Cup
- Oil - 1 Teaspoon
- Dried red chilies - 4
- Grated coconut - 3 Tablespoons
- Black peppercorns - 6
- Fried cashew nuts, for garnishing - 1 Tablespoon
- For Tempering
- Oil - 2 Tablespoons
- Cumin seeds - 1 Teaspoon
- Curry leaves - 7
How to Make Sama Peanut Rice
Step 1: In a wok, take two ¼ cups of water and bring it to boil.
Step 2: Meanwhile, wash the sama rice into running water and soak it for a while.
Step 3: Once the water started boiling add rock salt and soaked sama rice to it. Stir it with the help of the wooden spatula.
Step 4: Cover the wok and cook until sama is thoroughly cooked.
Step 5: In the meanwhile, dry roast peanuts until light brown and skin starts to peel off then remove them from the pan. Allow these peanuts to cool for a while.
Step 6: Once the peanuts cool enough, rub them between hands and remove the skin. Reserve 1 tablespoon of them.
Step 7: In a frying pan, heat oil over medium flame. Once the oil is hot reduce the flame and add dry red chillies and sauté it for a few seconds.
Step 8: Add peppercorn and coconut and sauté them over low heat for about 2 minutes. Remove from the heat and set aside to cool.
Step 9: In a mixer grinder, grind first roasted chili, coconut, and peppercorn into powder then add skinned peanuts to it and grind it again into a coarse powder.
Step 1: In the same pan, heat oil and add cumin seeds. Allow them to splutter.
Step 2: Then add curry leaves, reserved peanuts and roast until curry leaves become crispy.
Step 3: Now, add this tempering and peanut mixture to cooked sama rice. Mix them well.
Step 4: Switch off the flame and transfer this rice to the bowl.
Step 5: Garnish it with fried cashew nuts and serve hot.
