Punjabi Kadhi with Rice Balls
Punjabi Kadhi with Rice Balls, deep-fried gram flour and rice fritters are served along with simmered in spiced, sour yogurt named Punjabi kadhi.
I have been planning to post this kadhi recipe since a month ago, but the things get busy, and this recipe was lying in my draft. But today I have decided to post this delicious recipe of Punjabi kadhi with rice balls. I do make different kadhi recipes at home, also the Gujarati kadhi as we all know it is a staple and as it is simple and quick to make. But this kadhi recipe has two different elements as like rice balls and kadhi. Thus it is little time consuming but not that hard to make.
To make this recipe, I have used ingredients like cooked rice, gram flour and some spices and veggies which I have suggested in the ingredients list for rice balls, and for kadhi, gram flour, yogurt, cumin seeds, fenugreek seeds, and some spice. So sharing here this recipe is fun to me. So guys enjoy!
Ingredients of Punjabi Kadhi with Rice Balls Recipe
- Cooked rice - 2 Cups
- Gram flour - 1 ¼ Cups
- Salt - 1 Teaspoon
- Turmeric powder - 1 Teaspoon
- Red chili powder - 2 Teaspoons
- Yogurt - 4 Tablespoons
- Oil - 2 Cups
- Cumin seeds - 1 Teaspoon
- Fenugreek seeds - ½ Teaspoon
- Dry red chilies - 1
- Finely chopped Ginger - 1 ½ Inch
- Fresh fenugreek leaves - 1 Cup
- Fresh spinach leaves - 1 Cup
- Finely chopped onion - 1
- Carom seeds - ½ Teaspoon
- Soda bi-carb - ½ Teaspoon
- Shredded and fried spinach for garnishing - 1 Tablespoon
How to Make Punjabi Kadhi with Rice Balls
Step 1: In a bowl, combine the 1 cup of gram flour, half teaspoon turmeric powder, one teaspoon red chili powder, yogurt, and salt. Whisk well, add a cup of water and whisk again.
Step 2: Heat two tablespoon oil in a pan. Add cumin seeds, fenugreek seeds, dried red chilies, and half teaspoon chopped ginger and sauté for a minute.
Step 3: Add the gram flour mixture to the pan. Mix and cook for 10-15 minutes or till thick.
Step 4: Now, heat sufficient oil in a skillet.
Step 5: In a bowl, combine the fenugreek leaves, spinach leaves, onion, salt, half teaspoon turmeric powder, one teaspoon red chili powder, carom seeds, remaining ginger, soda bi-carb and two tablespoons of gram flour. Mix well.
Step 6: Divide into small bite-sized portions and shape into balls and deep fry in hot oil till golden brown. Drain on absorbent paper.
Step 7: Take the cooked rice in a bowl and mash them slightly. Apply water on your palms and divide the, mashed rice into eight compact portions. Place in the microwave oven on high for a few minutes.
Step 8: Add the fried pakoras to the cooked gram flour mixture reserving four pieces for garnishing. Cook the mixture for a minute.
Step 9: Take individual cup-plate and place two rice portions in each cup and pour a portion of the kadhi onto them. Place reserved pakoras on the plate and garnish with a little fried spinach.
Step 10: Savor it hot.
