Ingredients of Parisian Chicken Salad Recipe
- Grapes - 375 gm
- Button mushrooms - 175 gm
- Cheddar cheese - 200 gm
- Cooked chicken breast - 250 gm
- Egg yolk - 1
- Mustard - 2 Cups
- Salt - 1 Teaspoon
- Pepper - 1 Teaspoon
- Sugar - 1/2 Teaspoon
- Wine vinegar - 15 ml
- Olive oil - 125 ml
- Curd - 3 Tablespoons
- Fresh parsley for garnishing - 1 Tablespoon
How to Make Parisian Chicken Salad
Step 1: Wash the grapes and slice them in half. Remove the seeds and discard, then place the grapes in a salad bowl.
Step 2: Thinly slice the mushrooms and cut the cheese into small cubes. Add to the bowl and stir gently to mix.
Step 3: Dice the chicken breast and add to the bowl. Stir to mix and set aside.
Step 4: To make the mayonnaise, in a bowl, mix egg yolk, mustard, salt and pepper, sugar and wine vinegar together until creamy.
Step 5: Gradually beat in the olive oil a little at a time until a thick mayonnaise is formed. Stir in the curd.
Step 6: Add the mayonnaise to the salad and toss gently to mix. Serve immediately, garnished with fresh lovage or parsley.
Step 7: Serve with warmed fresh crusty French bread.
- Use canned, flaked fish, such as salmon or tuna, in place of the chicken. Use gruyere or red Leicester in place of the cheddar.
