Gosht or meat Biryani is a popular Mughlai recipe and very popular in a different part of India. Gosht Biryani is one of those scented biryanis made with almonds, melon seeds, and cream. Rich and aromatic, it is ideal for special meals. Gosht Biryani is made on the special occasion, during festivals or on weekends. It is easy to cook and the best to enjoy with friends and family get together.
To make gosht biryani, meat is marinated with different spices along with curd then meat and rice and cooked separately and at last cooked meat and rice are assembled layer by layer. So the rich flavor of meat and spices makes this dish flavourful. This one-pot meal is best to serve with raita, Mirchi ka salan or shorba.
Ingredients of Gosht Biryani Recipe
- Meat - 1 1/2 Kg
- Whisked yogurt - 2 Cups
- Ginger paste - 3 Teaspoons
- Garlic paste - 2 Teaspoons
- Red chili powder - 1 1/2 Teaspoons
- Almonds - 10
- Watermelon seeds - 2 Teaspoons
- Musk melon seeds - 2 Teaspoons
- Caraway seeds - 1 Teaspoon
- Peppercorns - 1 Teaspoon
- Mace flakes - 4
- Nutmeg - 1
- Cinnamon stick - 1 inch
- Green cardamoms - 4
- Long grain rice - 1 Kg
- Onion - 2
- Saffron - 1/2 Teaspoon
- Screw pine water - 2 Teaspoons
- Warm milk - 1/2 Cup
- Ghee - 1 Teaspoon
- Thick cream - 3 Teaspoons
- Oil - 1/2 Cup
- Salt - 1 Tablespoon
How to Make Gosht Biryani
Marinate the mutton:
Step 1: In a blender add yogurt, ginger paste, garlic paste, red chili powder, almonds, watermelon seeds, musk melon seeds and ground to a paste. Keep it aside.
Step 2: Add caraway seeds, peppercorns, mace flakes, cinnamon stick and green cardamoms to a blender and blend them. Keep it aside.
Step 3: Wash the mutton and drain it of all water. Mix the meat with previously grounded paste, spices and salt. Marinate for 30 minutes.
Prepare the rice:
Step 2: Wash and soak the rice in a liberal quantity of water for 15 20 minutes, then drain the water.
Step 3: Boil 2 1/2 liters of water with a little salt. Once the water starts to boil, add the rice and cook for about 5- 6 minutes till it is half done.
Step 4: Once done, drain the water and transfer the rice to a wide pan.
Cook the mutton:
Step 5: Heat the oil and fry the onions till golden brown. Add the marinated meat and keep stirring till it comes to a boil.
Step 6: Add a little water and cook for 25 minutes till the meat is tender.
Step 7: When done, the meat should have 2 cups of gravy left.
Assemble and serve:
Step 8: Take a heavy bottom pan and smear it with oil.
Step 9: Place two-thirds of the rice in it, followed by the cooked meat with the gravy. Cover this with the balance rice.
Step 10: Sprinkle saffron dissolved in screw pine water and milk, ghee, and cream.
Step 11: Cover with a tight-fitting lid and cook first on high flame for 1-2 minutes and then on low flame for about 10-15 minutes till the rice is done and steaming.
Step 12: Delicious gosht biryani is ready to serve. Serve it hot with mint or onion raita.
