Persian Zucchini Fritters
Zucchini is one of my favourite vegetables. I love to try different dishes made with it. Recently I came across a Persian Recipe Cookbook, which has many Persian recipes to try out. And as soon as I know a recipe to make with zucchini, I can't hold myself to try it. Zucchini is grated and mixed along with flour, feta cheese, mint, eggs, and more. And then the fritters are deep-fried in the oil. And it turns a perfect recipe to enjoy. So, don’t wait long and try this delicious Persian style Zucchini fritters with feta cheese and mint.
Ingredients of Persian Zucchini Fritters Recipe
- Feta cheese - 2 Oz
- Eggs - 2
- Chopped fresh mint leaves - 3 Tablespoons
- Yogurt - 1/4 Cup
- Frying oil - 1/2 Cup
- Salt - 1 Teaspoon
- Garlic cloves - 3
- Flour - 2 Tablespoons
- Zucchini - 2 1/2 lb
- Pepper - 1 Teaspoon
How to Make Persian Zucchini Fritters
Step 1: In a colander, place the grated zucchinis and sprinkle salt; allow it to sit for 20 minutes.
Step 2: Place the zucchini in a clean cheesecloth and twist to remove the moisture.
Step 3: In a bowl, mix the flour, garlic, pepper, eggs and salt.
Step 4: Stir in the chopped mint, feta cheese and the zucchini.
Step 5: In a pan, add oil and spoon in the zucchini batter; place on paper towels to drain excess oil.
Step 6: Use a plate to serve the zucchini fritters with a small bowl of yogurt.
