Matla Undhiyu is a Gujarat’s traditional recipe that is typically cooked in a Matla or earthen pot. In south Gujarat, it is also known as umbadiyu or ubadiyu. It’s a Gujarati version of Barbeque. Matla undhiyu is cooked with various seasonal vegetables like potatoes, surti papdi, tuvar lilva, green chilies, fenugreek leaves and more.
All the vegetables are cooked with other spices on the SLOW flame in the earthen pot. It has a very unique and delicious taste of vegetables and the earthen pot add some different taste to the food. Last week I have visited my village, where we have planned to cook it at our farmhouse. We cooked it and it tastes very delicious and we enjoyed a lot. Here I bring to you the easy recipe of Matla Undhiyu.
Ingredients of Matla Undhiyu Recipe
- Potatoes - 6
- Eggplant - 4
- Sweet potatoes - 2
- Surti papdi (green beans) - 1 Bowl
- Tuvar lilva - 1 Bowl
- Green chilies - 8
- Garlic-ginger paste - 4 Tablespoons
- Anise seeds (ajwain) - 1 Teaspoon
- Salt - 1 Tablespoon
- Fenugreek leaves - 1 Cup
- Purple yam - 250 gm
- Cabbage leaves - 5
How to Make Matla Undhiyu
Step 1: Properly wash and peel the surti papdi.
Step 2: Chop tuvar, green chili, garlic, and ginger.
Step 3: Cut the potatoes in the semi-large pieces and slit the eggplant.
Step 4: Cut the purple yam into big pieces.
Step 5: In a bowl, add all these ingredients and add one tablespoon oil to it and mix them well.
Step 6: Now, take an earthen pot and wash it properly from inside and outside.
Step 7: Now, place cabbage leaves into the earthen pot and add surti papdi to the pot.
Step 8: Add remaining vegetables into the pot and cover the pot with cabbage leaves.
Step 9: Now, seal the top with flour dough.
Step 10: Place this earthen pot on the flame and cook for about 1 hour.
Step 11: After that, open the pot and remove the delicious undhiyu from the pot.
Step 12: Add sesame oil, green chutney, garlic chutney in the undhiyu.
Step 13: Serve hot and delicious matla undhiyu with puri.
