Masala Boondi is another Diwali special snack recipe which is very crispy and seasoned with dry spices. To make masala boondi at home is easy and quick. It is also known as kara boondi, and it’s a standalone snack. It is like small golden pearls that just melt in your mouth. It is easy and super quick to make with using very few ingredients. Ingredients of Masala Boondi Recipe
- Besan (Gram flour) - 1 Cup
- Rice flour - ½ Cup
- Cooking soda - 1/4 Teaspoon
- Salt - 1/2 Teaspoon
- Coarse pepper powder - 2 Teaspoons
- Garlic flakes - 4
- Cashew nuts - 8
- Ground nuts - 2 Tablespoons
- Curry leaves - 1 Spring
- Ghee - 1 Teaspoon
- Oil for frying - 2 Cups
How to Make Masala Boondi
Step 1: In a medium-large bowl, mix the gram flour, rice flour, cooking soda, and salt well.
Step 2: Add water gradually to the prepare flour mixture and prepare the thin batter.
Step 3: Heat oil in a skillet over a HIGH flame. Once the oil is heated, take a perforated ladle overheated oil and using another deep ladle spoon the prepared batter over the perforated ladle and just above the oil spared the batter.
Step 4: Wipe the ladle and fry these boondies with constant turning until turns golden.
Step 5: Drain them and put them on a kitchen towel. Repeat this process for remaining batter.
Step 6: Now, heat ghee in another pan then add cashew nuts and ground nuts and fry them until golden.
Step 7: Then add curry leaves and crushed garlic sauté them till nice flavor rises and add half of the coarse pepper powder and give a quick stir and turn off the flame.
Step 8: Add fried boondies, remaining pepper powder, and salt if required. Toss them well.
