It’s a tasty Indian cooler to beat the heat in this summer. As the summer starts, children’s and other family members want some cold desserts, ice creams to taste and enjoy. So last week I made my mind and made a mango Kesar kulfi. Here is a complete recipe for mango Kesar kulfi.
Ingredients of Mango Kesar Kulfi Recipe
- Milk - 500 ml
- Sugar - 2 Cups
- Cream - 2 Tablespoons
- Few strands of saffron
- Mango pulp - 1 ¼ Cup
- Pistachios (pista) - 2 Teaspoons
- Kulfi moulds - 8
- Ice cream sticks - 8
How to Make Mango Kesar Kulfi
Step 1: In a pan, add milk and bring to a boil on a heat.
Step 2: Now, in a small bowl, add two teaspoons of boiled milk and soak the saffron strands for 4-5 minutes. Keep aside.
Step 3: Now, put the milk on the heat and reduce the large quantity of milk, keep stirring so the milk gets not burned.
Step 4: Now, add the soaked saffron to the milk, stirring all the while and reduce it to half.
Step 5: Now, add sugar and cream to the milk and cook it for 3-4 minutes.
Step 6: Once the milk reduced, remove it from the heat and let it cool completely.
Step 7: After the milk cools down, add pistachios and mango pulp to the milk and mix well.
Step 8: Now, pour this mixture to the kulfi moulds and insert icecream sticks into each mould and set the moulds into the deep freezer for 3-5 hours.
Step 9: Let it set and once its freeze completely serves chilled.
