Litti Chokha
When you think about any region in the world, it reminds you of its cuisine. Similarly, when we think about Bihari food, the first thing that comes in our mind is the legendary Litti Chokha. Litti Chokha is a traditional dish that is loved by people across ages. It's not just a food but a lifetime experiences a person must have. It is a popular dish that is made with whole wheat flour, stuffed with roasted gram flour, commonly known as sattu, and its known as Litti.
Litti is a bit hard and looks likes Rajasthani bati, but they are not similar. Litti is immersed in ghee and makes the litti soft to chew. Litti is enjoyed with Chokha that is prepared with brinjal, tomato, onion, potato, and different spices. Litti chokha is very famous across India, and you can find it in parts of northern India. In this recipe, eggplant or brinjal is the main ingredient that makes this dish irresistible. You can serve it in the main course at lunch or dinner. Ingredients of Litti Chokha Recipe
- For the Dough:
- Whole wheat flour - 2 Cups
- Salt - 1/2 Teaspoon
- Ghee - 2 Tablespoons
- Water - 1/2 Cup
- For the Filling:
- Sattu (roasted gram flour) - 1 Cup
- Finely chopped and peeled ginger - 1
- Finely chopped and peeled garlic cloves - 6
- Finely chopped green chilies - 5
- Finely chopped fresh coriander leaves - 1 Tablespoon
- Ajwain - 1 Teaspoon
- Nigella seeds (kalaunji) - 1 Teaspoon
- Dried mango powder - 1 Teaspoon
- Masala from any mango pickle - 1 Tablespoon
- Mustard oil - 1 Teaspoon
- Salt - 1 Teaspoon
- For the Chokha:
- Brinjal - 1
- Medium chopped tomato - 1
- Medium sized potatoes - 3
- Small onion - 1
- Finely chopped green chilies - 1
- Chopped fresh coriander leaves - 1 Tablespoon
- Mustard oil - 1/2 Teaspoon
- Lime juice - 1/2 Teaspoon
- Black salt - 1 Teaspoon
- For the Tempering:
- Refined oil - 1 Tablespoon
- Mustard seeds - 1/2 Teaspoon
- Dried red chili - 1
How to Make Litti Chokha
To Knead the Dough:
Step 1: Sift the wheat flour and salt into a Mixing bowl.
Step 2: Add ghee and mix with your fingers until it resembles breadcrumbs.
Step 3: Add required water and knead a soft dough.
Step 4: Cover the dough and keep aside to rest for 15 minutes.
To Prepare the Filling:
Step 1: Take a mixing bowl and add sattu, pickle masala, salt, garlic, ginger, green chilies, coriander leaves, ajwain, kalonji, dry mango powder, salt, and mustard oil.
Step 2: Mix them well with your fingers. Adjust the seasoning.
To Make the Littis:
Step 1: Preheat Oven at 180°C.
Step 2: Knead the dough again before making balls for litti.
Step 3: Now, divide the dough and make balls from it to the desired size.
Step 4: Now, add a spoonful of filling in the centre of each call and cover the filling and seal dough edges well and roll it into a ball.
Step 5: Now, put these litti balls on a baking tray and bake them into the preheated oven for 5-10 minutes, until they are golden brown.
To Prepare the Chokha:
Step 1: Now, to prepare chokha, slit the brinjal, and put an Aluminium foil on the Baking tray and place the brinjal and tomatoes on top.
Step 2: Roast them on the highest temperature and once done, peel the brinjal and tomatoes and mash them well.
Step 3: Now, scrub the potatoes and boil them till tender. Once done, peel and mash them in a bowl.
Step 4: Transfer the mashed potato, brinjal, and tomato into a mixing bowl and add onion, green chilies, coriander leaves, mustard oil, lime juice, and black salt.
Step 5: Mix the ingredients well. Adjust the seasoning.
For Tempering:
To make the chokha more tempting, I prefer to temper the chokha.
Step 1: To temper, in a small frying pan, add one tablespoon of refined oil over MODERATE heat.
Step 2: Then add mustard seeds and red chilies to oil and let them crackle.
Step 3: Now, remove the pan from the heat and pour it over the chokha.
To Serve:
Step 1: To serve the Litti chokha, transfer the chokha in a Serving bowl.
Step 2: Place the chokha bowl and litti into the serving plates.
Step 3: Enjoy the littis with the delicious chokha with melted ghee on the side.
