Ingredients of Kaddu Ka Raita Recipe
- Finely chopped red pumpkin - 2 Cups
- Ghee - 1 Teaspoon
- Cumin seeds - 1 Teaspoon
- Finely chopped green chilies - 2 Teaspoons
- Sugar - 1 Teaspoon
- Beatun curd - 1 ½ Cups
- Milk - 2 Tablespoons
- Salt - 1 Teaspoon
- Crushed roasted peanut - 1 Tablespoon
- Finely chopped coriander leaves - 2 Teaspoons
How to Make Kaddu Ka Raita
Step 1: In a deep pan, heat ghee and add cumin seeds. Allow them to crackle.
Step 2: Once cumin seeds crackle, add chopped pumpkin, sugar and salt. Mix well and cook it for about 6 minutes over medium heat by covering the pan. Stir it occasionally.
Step 3: Now, add chopped green chilies and sauté for a few seconds over medium heat.
Step 4: Switch off the flame and set aside to cool for about 2 minutes.
Step 5: Once it cool, mash the pumpkin pieces with using the potato masher.
Step 6: Then add curd to the mashed pumpkin and mix well.
Step 7: Set this pumpkin and curd mixture in the refrigerator for about one hour.
Step 8: Garnish it with peanuts and coriander leaves and serve chilled.
