Ingredients of Andhra Style Stuffed Baingan Recipe
- Peanuts - ½ Cup
- Sesame seeds - 2 Tablespoons
- Cumin seeds - 1 Teaspoon
- Coconut - ½ Cup
- Coriander seeds - 1 1/2 tablespoons
- Dry red chili - 4
- Oil - 2 Cups
- Onion - 1 Cup
- Ginger garlic paste - 1 Tablespoon
- Salt - 1 Teaspoon
- Red chili powder - 1/2 Teaspoon
- Garam masala - 1/2 Teaspoon
- Tamarind paste - 2 Tablespoons
- Curry leaves - 10
- Brinjal (Eggplant) - 5
How to Make Andhra Style Stuffed Baingan
Step 1: In a Frying pan, add peanuts, cumin seeds, coconut, sesame seeds, coriander seeds, dry red chilies, and roast them for 4-5 minutes on MEDIUM heat.
Step 2: In another frying pan, heat two tablespoons of oil and fry the onions until it turns golden brown, then add ginger garlic paste, salt, red chili powder, and garam masala. Let it cook for 4-5 minutes on MEDIUM heat.
Step 3: Transfer this onion mixture to the Blender, add roasted peanuts and sesame seeds, tamarind paste, and make a smooth paste of it.
Step 4: Now, take the eggplants and make cuts on it. Fill the eggplants with the prepared spices mixture.
Step 5: Now, in a Skillet heat 1 cup of oil and add curry leaves, stuffed eggplant, and cover it with lid.
Step 6: Cook them for 10 minutes on MEDIUM heat.
Step 7: Flip the eggplants to cook them from all sides.
Step 8: Cook the eggplants until it's color changes to dark brown from all sides.
Step 9: Once ready, remove it from the heat and serve hot with roti or rice.
