Green Mango Curry
Raw Mango or Green Mango curry is yummy, tangy and simple curry recipe. Summer is the season of mango. People love to experiment with mango to make various dishes. In India, chutneys are usually served as an accomplishment to curry, but this one is particularly nice served as a main course in your meal.
Here I am sharing a mango chutney recipe which is not only easy to make but delicious also. In Gujarat and Kerala, Raw Mango Curry is a favorite dish to have in the main course. In Kerala, it is also known as Pacha manga curry. You can enjoy this tasty curry with Chapati or Phulka Roti or with steamed rice.
Ingredients of Green Mango Curry Recipe
- Malt vinegar - 4 Tablespoon
- Crushed dried chilies - ½ Cup
- Cloves - 6
- Peppercorns - 6
- Roasted cumin seeds - 1 Teaspoon
- Onion seeds - 1 Teaspoon
- Salt - 1 Teaspoon
- Granulated sugar - ¾ Cups
- Unripe green mangoes, peeled and cubed - 450 gm
- Fresh root ginger, thinly sliced - 2 Inch
- Crushed garlic cloves - 2
How to Make Green Mango Curry
Step 1: Pour the vinegar into a pan, and add the chilies, cloves, peppercorns, cumin and onion seeds, salt and vinegar.
Step 2: Place over low heat and simmer until the spices infuse the vinegar for 15-20 minutes.
Step 3: Now, add the mango, ginger, and garlic.
Step 4: Simmer until the mango is mushy and most of the vinegar has evaporated for 10 minutes.
Step 5: Once it’s done remove it from the heat and serve it.
