Gawar ki Sabji
Gawar ki sabji or Gawar Nu Shaak is a cluster beans curry recipe. In different parts of India, it is made with different style and methods. In Gujarat, it is severed in lunch along with roti, rice, dal, pickle and salad. This healthy cluster beans recipe requires minimal ingredients and can be quickly ready in just 30 minutes. My family loves this vegetable, and we usually make it once a week.
To make this recipe, prefer to choose fresh cluster beans. Gawar is slightly bitter in taste, unlike other beans. It takes a bit longer time to cook so it’s preferable to cook in the pressure cooker. Some people also prefer to cook it in a pot, but it requires more time also it needs to cook on medium flame, so it becomes tasty. Ingredients of Gawar ki Sabji Recipe
- Cluster beans - 350 gm
- Oil - 1 Tablespoon
- Carom seeds - 1/4 Teaspoon
- Asafoetida - 1/4 Teaspoon
- Coriander cumin powder - 2 Tablespoons
- Salt - 1 Teaspoon
- Red chilli powder - 1 Tablespoon
- Turmeric powder - 1 Tablespoon
- Ginger paste - 1 Teaspoon
- Water - 1/4 Cup
How to Make Gawar ki Sabji
Step 1: Wash the cluster beans thoroughly.
Step 2: Remove the head and tail part of it then chop the cluster beans lengthwise 1/2 inch long.
Step 3: Now, heat the oil in a pressure cooker and add carom seeds. When it crackles, add asafoetida. Then add garlic paste and saute it for 1-2 seconds.
Step 4: Then add red chilli powder, coriander-cumin powder, turmeric powder and mix them well.
Step 5: Now add the chopped cluster beans and mix well.
Step 6: Now add salt, 1/4 cup of water and cover the pressure cooker with the lid and cook it for four whistles.
Step 7: Once done, remove the pressure cooker from the heat and let it cool down. Then open the lid and mix it.
Step 8: Delicious Gawarfali sabji is ready to serve.
Step 9: Serve it hot with Phulka roti.
