Chicken Stew, a stew full of with not only chicken but veggies too. And of course, there is nothing better to pleat into a cold winter’s night than a hearty bowl of a stew of chicken.
If you are a regular reader, by now you come to know that I love chicken dishes. I can eat chicken dish every single day without getting bored. About a year back, when I tasted it the first time, I came to know about this chicken stew and tried it immediately. It is quick to make. I like to enjoy this stew warm. It tastes just fantastic, just like other chicken dishes, a combination of flavours of veggies are bursting your mouth. So guys warm up with a hearty bowl of chicken stew!
Ingredients of Chicken Stew Recipe
- Lean chicken breast - 100 Gm
- Oats or roasted oats flour - 2 Tablespoons
- Vegetable stock - 2 Cups
- Chopped onion - 2
- Peppercorns - 2
- Clove - 1
- Cinnamon stick - 1
- Chopped garlic clove - 1
- French beans - ½ Cup
- Baby corn - ½ Cup
- Mushrooms - 1 Cup
- Cubed carrots - ½ Cup
- Salt - ½ Teaspoon
How to Make Chicken Stew
Step 1: Dissolve the oats in a ¼ cup of vegetable stock and set aside.
Step 2: Place a saucepan over MEDIUM flame. Add onions dry roast until lightly browned; stirring continuously.
Step 3: Add peppercorn, clove and cinnamon stick and dry roast for a minute; stirring continuously.
Step 4: Now, add garlic, French beans, baby corn, carrots, chicken, salt and the remaining vegetable stock. Cook all over low heat until the vegetables are soft and tender.
Step 5: Then add mushrooms and simmer for 3-4 minutes.
Step 6: At last, add the dissolved oats and vegetable stock mixture and bring to boil, while stirring continuously so that no lumps remain. Let it simmer for 5-7 minutes and add water if required.
Step 7: Once done, plate it in a deep dish and savor it hot.
