This lip-smacking rolls is prepared using chana dal, onion, green chilli, ginger-garlic paste, min-coriander leaves along with different spices and other ingredients. Ingredients of Chana Cutlet Rolls Recipe
- For Cutlet
- Brown chickpeas - 250 gm
- Water - 4 Cups
- Onions - 1 Cup
- Green chili - 1 Teaspoon
- Garlic - 1 Tablespoon
- Ginger - 1 Tablespoon
- Coriander leaves - 2 Tablespoons
- Mint leaves - 2 Tablespoons
- Salt - 1 Tablespoon
- Chaat masala - 1 Teaspoon
- Dry mango powder - 1 Teaspoon
- Cumin powder - 1 Teaspoon
- Lemon juice - 1 Teaspoon
- Gram flour - ½ Cup
- Oil for shallow frying - 2 Cups
- For Dough
- Wheat flour - 2 Cups
- Water - 2 Cups
- For Green Chutney
- Coriander leaves - 1 Cup
- Mint leaves - 1 Cup
- Green chili - 2 Teaspoons
- Garlic - 1 Teaspoon
- Black salt - 1 Teaspoon
- Dry mango powder - 1 Teaspoon
- Lemon juice - 1 1/2 Teaspoon
- Water - ½ Cup
- Onion - ½
- Tamarind chutney - ½ Tablespoon
How to Make Chana Cutlet Rolls
Step 1: In a bowl, add water, brown chickpeas and soak them for overnight.
Step 2: In a pressure cooker, add soaked chickpeas, water and cover it with lid and cook till you hear 7-8 whistles.
Step 3: Remove the cooker from the heat and drain and mash the chickpeas.
Step 4: Transfer it in a bowl, add onions, garlic, ginger, chili, coriander leaves, salt, mint leaves, chaat masala, cumin powder, dry mango powder, lemon juice, gram flour and mix them well.
Step 5: Now, take some mixture in your hands and shape it into a cutlet.
Step 6: In a frying pan, heat some oil and shallow fry the cutlets till it becomes crispy from all the sides. Once done, remove it from the pan and drain it on an absorbent paper. Keep it aside.
Step 1: In a bowl, add wheat flour, water and knead a smooth soft dough.
Step 2: Take a ball from the dough and flatten it with the help of a rolling pin.
Step 3: On a hot tawa place it and cook till it turns golden brown from both sides.
Step 4: Then remove it from tawa and keep aside.
For Green Chutney:
Step 1: In a blender, add mint leaves, green chili, garlic, black salt, dry mango powder, lemon juice, water and blend it into a smooth paste.
Step 1: On the prepared roti, spread the green chutney and onions.
Step 2: Then place the cutlet on it and top it with tamarind chutney.
Step 3: Roll it tightly and prick a toothpick inside so it does not open.
Step 4: Cut it into half and serve with coriander chutney.
