I have made this recipe recently, and I must say I am obsessed with it. It is perfect for a weeknight dinner and also is an excellent dish to warm weather. This combination of shrimp with angel-hair pasta which is cooked in champagne along with veggies like shallots, mushrooms and tomatoes makes very flavorful shrimp and pasta dish. Ingredients of Champagne Shrimp and Pasta Recipe
- Extra-virgin olive oil - 1 Tablespoon
- Sliced fresh mushrooms - 1 Cup
- Shrimp - 1 Cup
- Minced shallots - 2 Tablespoons
- Plum tomatoes - 2
- Finely chopped fresh parsley - 3 Tablespoons
- Champagne - 1 ½ Cup
- Heavy cream - 1 Cup
- Angel hair pasta - 8 oz
- Freshly shredded parmesan cheese - 1 Cup
- Salt - 1 Teaspoon
- Pepper - 1 Teaspoon
How to Make Champagne Shrimp and Pasta
Step 1: In a large pot, bring lightly salted water to boil. Cook the pasta in the boiling water for 6-8 minutes or al-dante and drain.
Step 2: Meanwhile, heat the oil in a large frying pan over MEDIUM heat. Add sliced mushrooms and cook them until tender. Remove from the pan and set aside.
Step 3: In the same pan, mix the shrimp, champagne and salt. Cook over high heat. When the mixture begins to boil, remove the shrimps from the pan.
Step 4: Add shallots and tomatoes to the champagne and boil the liquid until it is reduced to ½ cup. This will take about 8 minutes. Then stir ¾ cup cream and boil until the liquid is slightly thick for 2 minutes.
Step 5: Now, add shrimps and mushrooms to the sauce and heat thoroughly, add more seasonings according to your taste.
Step 6: Toss the hot cooked pasta with the remaining cream and parsley.
Step 7: Serve a spoon of shrimp over the pasta and top it with the shredded parmesan cheese.
