Ingredients of Baked Potatoes with Chicken and Cheese Recipe
- Potatoes - 4
- Salt - 1 Teaspoon
- Oil - 2 Tablespoons
- Chopped onions - 2
- Chopped roasted or fried chicken breast - 1 Cup
- Tomato ketchup - 5 Tablespoons
- Chopped coriander leaves - 1 Teaspoon
- Freshly ground black pepper - ¼ Teaspoon
- Grated cheddar cheese - 1 ½ Cup
How to Make Baked Potatoes with Chicken and Cheese
Step 1: Scrub the potatoes and place them in a pan of water by adding some salt.
Step 2: Place this pan over the high heat and bring it to boil.
Step 3: Once it starts boiling, lowers the heat and simmers it for 15-20 minutes or until the potatoes are tender.
Step 4: Drain the excess water and allow the potatoes to cool a little until you can handle them.
Step 5: Cut the potatoes in half lengthwise and scoop out the center using a spoon, leaving a thin wall of flesh.
Step 6: Place the scooped out potato in a bowl. Mash it well and keep aside.
Step 7: In a pan, heat oil over moderate heat.
Step 8: Once the oil is heated add chopped onions and sauté it for a minute or until lightly golden.
Step 9: Then add roasted or fried chicken, tomato ketchup, coriander leaves, pepper and salt to it.
Step 10: Toss the ingredients gently and remove the pan from heat.
Step 11: Transfer this mixture to the pan to the bowl containing the mashed potato. Mix well.
Step 12: Taste and add more pepper and salt to it if required.
Step 13: Pile this mixture into potato shells.
Step 14: When these potatoes are ready to serve, Sprinkle the potatoes with cheese and place these potatoes on a baking tray.
Step 15: Then bake it in the oven which is preheated to 200°C for about 15-20 minutes until golden.
