Aloo Gobi Matar
As the name suggests, Aloo gobhi matar is a delicious north Indian style sabzi recipe made with potatoes, green peas and cauliflower. The dish is prepared in the spicy tandoori masala. Vegetables are marinated with different Indian spices, and marination enhances the taste of these vegetables. It is my favorite vegetable, and I am sure it will become yours too.
Aloo Gobi matar is a quick and easy dish that can be a prt of your main course meal or side dish. Its a meal for those days when you dont want to spend much time in the kitchen. It is cooked quickly, and the spices add a delicious taste to the vegetables. Serve this aloo gobi matar dish hot with tandoori roti and raita. You can also garnish the dish with one tablespoon of kasoori methi instead of the coriander leaves and serve.
Ingredients of Aloo Gobi Matar Recipe
- Cauliflower florets - 300 gm
- Boiled potatoes - 200 gm
- Green peas - 100 gm
- Coriander leaves - 1 Cup
- Oil - 2 Tablespoons
- Salt - 1 Teaspoon
- Shahi jeera - ½ Teaspoon
- To marinade:
- Fresh curd - 2 Cups
- Ginger paste - ½ Teaspoon
- Garlic paste - ½ Teaspoon
- Oil - 1 Teaspoon
- Black pepper powder - ½ Teaspoon
- Clove - 1
- Green cardamom powder - 1
- Black salt - ½ Teaspoon
- Kasoori methi - 1 Teaspoon
- Lemon juice - 1 Tablespoon
- Salt - ½ Teaspoon
How to Make Aloo Gobi Matar
Step 1: In a bowl, mix all the ingredients for the marinade.
Step 2: Marinade the cauliflower, potatoes, and peas in the marinade for at least 30 minutes.
Step 3: In a frying pan, add the shahi jeera, when it crackles add the marinated vegetables and toes them well.
Step 4: Cook for 5-6 minutes uncovered.
Step 5: Once it's ready, remove it from the heat and garnish it with coriander leaves and serve hot with butter roti.
