Ingredients of Aam ki Launji Recipe
- Raw mango - 500 gm
- Sugar - 700 gm
- Vinegar - 100 ml
- Ginger juice - 1 Tablespoon
- Garlic juice - 1 Tablespoon
- Garam masala powder - 1 Teaspoon
- Red chili powder - 1 Teaspoon
- Green cardamom powder - 2 Teaspoons
- Crushed fennel seeds - 2 Teaspoons
How to Make Aam ki Launji
Step 1: Peel and grate the raw mangoes. Mix with a little salt and keep in the sun for 2-3 hours to dry out the moisture.
Step 2: Place in a kadhai and mix with sugar and white vinegar.
Step 3: Cook over MEDIUM heat,
Step 4: Heat 1 teaspoon each of juices of ginger and garlic, garam masala powder, red chili powder, crushed seeds of green cardamom and crushed fennel.
Step 5: Continue to cook while stirring until the mixture becomes thick.
Step 6: Check for seasoning. Remove and allow to cool down.
Step 7: Keep the launji in a sterilized jar.
Step 8: Put the lid on and leave it to mature.
Step 9: It takes about 3-4 days for maturing.
