Another variation of a favorite Indian Diwali snack. Palak Sev, it is very popular as a Palakoora Janthikalu and Palakura Murukulu. It is famous as palak sev from Gujarat and Palakura Murukulu from South India. Also, we can say it’s a healthy version of sev snack. You can carry this snack in your bag to work, or even you can pack this snack to your kid's snack box. These green colored sev is very crispy and crunchy. Spinach, gram flour, rice flour, cumin seeds, aniseeds and a hint of asafetida go into making this crunchy, innovative treat.
Ingredients of Palak Sev Recipe
- Spinach - 2 Bunches
- Chickpea flour - 1 Cup
- Rice flour - 1 Cup
- Green chilies - 8
- Cumin seeds - 1 Teaspoon
- Aniseeds (Anise seeds) - 1 Teaspoon
- Asafetida - ¼ Teaspoon
- Salt - 1 Teaspoon
- Oil for frying - 3 Cups
How to Make Palak Sev
Step 1: Take some water in a pan and bring it to boil. When water started boiling add spinach leaves and blanched them. Drain the excess water.
Step 2: In a mixer blender, place the blanched spinach and chopped green chilies. Blend them into a smooth paste. Set aside.
Step 3: In a bowl, combine all dry ingredients along with two tablespoons of hot oil. Mix well.
Step 4: Add spinach paste and knead to a soft dough, add water if required. Make sure that the dough is soft and smooth.
Step 5: Take a little portion of dough and fill it with sev press.
Step 6: Heat oil in skillet at smoking point. When the oil is hot, carefully press the sev dough over the hot oil.
Step 7: On MEDIUM heat deep fry them from both sides until lightly golden.
Step 8: Drain them on kitchen paper. Once cooled utterly sprinkle some chaat masala, if it requires.
