Ingredients of Abalone Soup Recipe
- Fish stock - 750 ml
- Canned abalone - 6
- Chopped spring onion - ½
- Soy sauce - 1 Tablespoon
- Oyster sauce - 2 Tablespoons
- Egg white - 1
- Salt - 1/2 Teaspoon
- Pepper - 1/2 Teaspoon
How to Make Abalone Soup
Step 1: In a saucepan, gently heat the stock, reserved abalone juice, spring onion and soy and oyster sauces.
Step 2: Cut the canned abalone into thin slices, then into matchsticks. Add to the stock and simmer gently for 15 minutes.
Step 3: Beat the egg white lightly. Heat the soup until boiling, then gradually stir in the egg white.
Step 4: Season with salt and pepper and serve immediately.
Step 5: Garnish with chopped fresh chives and a sprig of fresh parsley before serving.
- You can also use chicken stock in place of the fish stock.
