Tikha Gathiya Recipe

Tikha Gathiya us a spicy, crunchy sev made from gram flour and red chilies. It’s a very famous Gujarati snacks dish. This Gathiya is little spicy and thicker than the normal sev. Tikha gathiya is used as an ingredients to make the chivda. Also, you can enjoy it alone. Follow this tikha gathiya recipe to make this crispy snacks.

Ingredients

  • 1 cup besan
  • 1 teaspoon carom seeds
  • 1 teaspoon red chili powder
  • ½ teaspoon turmeric powder
  • ¼ teaspoon black paper powder
  • A pinch of baking soda
  • Salt to taste
  • Oil for deep frying
  • Water as required to make dough

How To Cook?

Step 1: In a large bowl, sieve the gram flour and then add red chili powder, turmeric powder, baking soda, carom seeds, black pepper powder, salt and 1 tablespoon oil and mix them well.

Step 2: Add required water to it and knead a smooth dough from it.

Step 3: Ensure the dough is not very soft or not very tough.

Step 4: Apply some oil to the dough and keep it aside.

Step 5: Now, take a Sev Machine and place a mould at the bottom of the machine to make a thick sev or gathiya.

Step 6: Then add dough into the machine and close the machine tightly.

Step 7: In a frying pan, heat the oil over the MEDIUM heat. When the oil becomes sufficiently hot, hold the machine over the frying pand and turn the machine handle and force the moulds to create a gathiya. Move the machine in a circular manner over the oil and turn the handle continuously.

Step 8: Fry the gathiya till it becomes golden brown for 4-5 minutes over the MEDIUM heat.

Step 9: Remove the gathiya from the oil and drain it on the absorbent paper.

Step 10: Let the Gathiya becomes cool then store it into the air tight container.
