Chicken in a Pot Recipe

Ingredients

  • 1.5 kg chicken thighs
  • ¼ cup plain flour
  • 2 rashers bacon, finely chopped
  • 1 green capsicum, diced
  • 1 onion, finely chopped
  • 425 gm peeled tomatoes
  • 1 tablespoons tomato paste
  • 2 chicken stock cubes
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • 200 gm mushrooms, sliced

How To Cook?

Step 1: Toss chicken thighs in flour.

Step 2: Combine all ingredients, except mushrooms in a 3 liter casserole dish.

Step 3: Cover and cook for 30 to 35 minutes on MEDIUM HIGH flame. Stir 2 to 3 times during cooking.

Step 4: Add mushrooms, Cook, uncovered for further 5 to 7 minutes on MEDIUM HIGH flame.

Step 5: Serve hot with Rice or chapatti.
