Almond Lemon Cake Recipe

Almond lemon is a classic cake recipe of the southern Spain. It’s a lightly and tender crumbed, softly sweet and lemony flavored cake recipe. The ground almonds gives a beautiful texture to the cake which everyone loves it. You can freeze the cake for 1 day. Here is the easy to make almond lemon cake recipe.

Ingredients

  • 1 cup caster sugar
  • 4 eggs
  • 200 gm butter
  • 2 grated lemons
  • 2 cup ground almonds
  • 2 teaspoon baking powder
  • 1/3 cup plain flour
  • 1 teaspoon vanilla bean paste
  • 200 g Butter

For Vanilla Glaze

  • 1 cup icing sugar
  • 1 cup melted butter
  • 1 tablespoon vanilla essence
  • 2 tablespoon boiling water

How To Cook?

Step 1: Preheat the oven to 180°C.

Step 2: Now, apply butter on the cake pan and line with baking paper.

Step 3: Add eggs and sugar into blender and blend them till it becomes smooth and frothy. Then add vanilla, butter and blend them till it’s completely mixed.

Step 4: Now, add ground almonds, baking powder and flour into the mixture and beat until it’s mixed. Fill this mixture into the cake pan and bake for 50 minutes.

Step 5: Now, to make vanilla glaze, mix boiling water, butter, icing sugar and vanilla essence in the bowl and beat them till smooth.

Step 6: Now, remove the cake from the oven and sprinkle with the glaze.

Step 7: Proceed until all the glaze is used. Let the cake completely cool on a rack. Once it’s cool serve it.
